White Fruit Cake
- 1/2 lb. pecan meats
- 1/2 lb. blanched almonds
- 1/2 lb. English walnuts
- 1/2 lb. candied cherries
- 1/2 lb. sifted flour (3 c.)
- 1/2 lb. butter
- 1 whole grated coconut
- 1/2 lb. crystallized pineapple
- 1/2 lb. citron
- 2 lb. white raisins
- 1 c. orange juice
- 1 lb. sugar
- 6 eggs
- 2 tsp. baking powder
- Prepare and chop nuts.
- Cut up fruit and mix with enough flour to keep it from sticking together.
- Cream butter, add sugar and beat well.
- Add eggs, 1 at a time, beat well after adding each egg. Add flour and orange juice alternately.
- Add coconut, fruit and nuts.
- Bake in large greased tubed pan at 250u0b0 to 275u0b0 for 2 1/2 to 3 hours.
