Irish Cabbage Quinoa Soup
- 4 tablespoons butter, divided
- 1 12 cups chopped onions
- 1 12 teaspoons caraway seeds, crushed
- 12 teaspoon black pepper
- 34 cup quinoa, rinsed
- 6 cups chicken broth
- 6 cups savoy cabbage, thinly sliced
- 4 ounces Canadian bacon, chopped
- salt and pepper
- In large pot, melt half the butter.
- Add onions, caraway seeds and pepper.
- Cook 5-6 minutes until onions are softened.
- Stir in quinoa and broth; bring to a boil.
- Reduce heat to low and simmer for 15 minutes.
- Stir in cabbage, cover and simmer, stirring, 4-5 minutes until cabbage is wilted and quinoa is tender.
- Transfer 1/3 of soup to food processor and puree until smooth.
- Return to soup pot and stir in bacon.
- Season to taste with salt and pepper.
