Irish Cabbage Quinoa Soup

  1. In large pot, melt half the butter.
  2. Add onions, caraway seeds and pepper.
  3. Cook 5-6 minutes until onions are softened.
  4. Stir in quinoa and broth; bring to a boil.
  5. Reduce heat to low and simmer for 15 minutes.
  6. Stir in cabbage, cover and simmer, stirring, 4-5 minutes until cabbage is wilted and quinoa is tender.
  7. Transfer 1/3 of soup to food processor and puree until smooth.
  8. Return to soup pot and stir in bacon.
  9. Season to taste with salt and pepper.
