Homemade Summer Sausage Recipe
- 5 pound hamburger
- 5 teaspoon (rounded) Morton tender quick salt
- 2 1/2 teaspoon mustard seed
- 2 1/2 teaspoon pepper
- 1 1/2 teaspoon garlic salt
- 2 teaspoon Hickory smoked salt, dry or possibly liquid
- Mix well in a large bowl and chill.
- Take out each day for 3 days and knead well.
- On the 4th day, make into rolls, work back and forth well to remove all the air pockets so they will hold their shape.
- Lay on broiler pan and bake at 350 degrees for 8 hrs.
- Makes 5 loaves about 8 to 9 inches long.
