Bacon Avocado Potato Salad Recipe

  1. Quarter or possibly cube the potatoes.
  2. Place the potatoes in cool water to cover in large pot.
  3. Bring to a boil, reduce heat slightly and cook till potatoes are tender.
  4. While potatoes cook, place cubed avocados in a bowl, sprinkle with the lime juice and toss to coat; set aside.
  5. Drain the potatoes and allow to cold to room temperature.
  6. Place the potatoes, bacon, green onion and cilantro in a large serving bowl.
  7. Season with salt and pepper and toss lightly to combine.
  8. Mix together the dressing ingredients.
  9. Taste the dressing and adjust the lime juice and cilantro if necessary.
  10. Add in dressing to potatoes and thoroughly mix.
  11. Mix in the cubed avocados.
