Baked Fish With Mushrooms And Basil Recipe
- 1 1/2 lb white fish fillets abt 3/4" thick
- 2 tsp extra virgin olive oil - (to 3 tspns) (optional) Salt to taste Freshly-grnd black pepper to taste
- 1/4 c. shredded basil leaves
- 6 ounce mushrooms sliced
- 3 Tbsp. dry white wine
- Seafood Alternatives: orange roughy, red snapper, halibut Preheat the oven to 425 degrees.
- Lightly butter or possibly oil a baking dish and arrange the fish fillets in it, tucking under thin ends if necessary so the fillets are in an even layer.
- Brush the tops of the fillets with extra virgin olive oil if desired, then season lightly with salt and pepper.
- Sprinkle the basil proportionately over the fish, top with mushrooms, pour in the wine and cover the dish with foil.
- Bake in the preheated oven till opaque through the thickest part, 12 to 18 min, depending on the thickness of the fillets.
- Transfer the fish fillets and mushrooms to individual plates and spoon a little of the cooking juices over.
- Serve immediately.
