Asari Clams With Garlic Sauce

  2. ** Salt & pepper to taste **.
  3. Heat Olive Oil in large sauce pan.
  4. Add Onion, Garlic, and chopped Chili.
  5. Saute until Onion is tender.
  6. Add Clams.
  7. Saute 2 minutes.
  8. Sprinkle with 3 tablespoons Parsley.
  9. Add Sherry and Lime juice.
  10. Increase heat and cover.
  11. Simmer until clams open about 5 minutes.
  12. Put clams in shallow bowl(s).
  13. Boil remaining sauce until very slightly thickened.
  14. Salt and fresh ground Black Pepper to taste.
  15. Pour sauce over clams.
  16. Sprinkle with remaining 2 tablespoons parsley.
  17. Serve immediately.
