Chocolate Peanut Butter Pie
- 4 eggs
- 1 c. butter, softened
- 6 oz. semi-sweet chocolate, melted and cooled
- 2 c. powdered sugar
- 1/2 c. peanut butter (smooth)
- 1 c. heavy cream (whipping)
- 1 (10-inch) baked pie shell
- chocolate shavings for garnish
- Beat eggs
- with
- 3/4
- cup
- of
- the
- butter,
- the melted chocolate and
- the sugar for 5 minutes until smooth and thick. In a
- separate bowl, beat peanut butter with the remaining 1/4 cup of butter.
- While
- beating, add up to 1/3 cup of the cream to make the
- peanut butter a spreadable consistency that will swirl readily
- into
- thethocolate mixture.
- Spoon chocolate mixture into
- pie
- shell.
- Swirl
- peanut butter into chocolate mixture. Beat
- remaining
- cream adding small amount of sugar. Top pie with cream and garnish with chocolate shavings.
