Strawberry-Orange Layer Cake
- 1 pkg. (2-layer size) white cake mix
- 1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
- 1 cup oil
- 4 eggs
- 1/2 cup granulated sugar
- 1/4 cup flour
- zest from 1 orange
- 1-1/2 cups finely chopped strawberries, divided Safeway 1 lb For $3.99 thru 02/09
- 1-1/2 cups milk, divided
- 1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
- 1/4 cup powdered sugar
- 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
- Heat oven to 350 degrees F.
- Beat cake mix, dry gelatin mix, oil, eggs, granulated sugar, flour, orange zest, and 1/2 cup each strawberries and milk in large bowl with mixer until blended.
- Pour into 3 greased and floured (8-inch) round pans.
- Bake 22 to 23 min.
- or until toothpick inserted in centers comes out clean.
- Cool cakes in pans 10 min.
- Remove to wire racks; cool completely.
- Beat pudding mix, powdered sugar and remaining milk in large bowl with whisk 2 min.
- Gently stir in COOL WHIP and remaining strawberries.
- Stack cake layers on plate, filling and frosting with COOL WHIP mixture.
