Quick Tomato-Basil Bruschetta

  1. Combine the tomatoes, basil, garlic and a pinch of salt and pepper in a medium bowl.
  2. Let sit for 5 minutes.
  3. Meanwhile, lightly toast the bread.
  4. Spoon the tomato mixture on the bread, drizzle with the oil and sprinkle with the pecorino before serving.
