Italian Sausage Dinner Bake

• 1 12 lbs Italian sausage, cut into 1 1/2 inch pieces
• 1 large onion, sliced
• 3 carrots, sliced
• 3 baking potatoes, peeled and cut into chunks
• 1 (28 ounce) can diced tomatoes
• salt and pepper

1. Preheat oven to 350F.
2. Combine ingredients in a large oven proof casserole.
3. Cover with foil and bake 1 1/2 hours.
