Apricot Banana Bread Recipe

  1. In large bowl, cream shortening and sugar.
  2. Beat in Large eggs 1 at a time, beating well after each addition.
  3. Blend in bananas and lemon juice.
  4. Mix together flour, baking soda and salt.
  5. Blend into banana mix; stir in apricots.
  6. Turn into greased and floured 9x5x3 inch loaf pan.
  7. Bake in 325 degree oven 1 hour and 10 to 20 min, or possibly till cake tester inserted in center comes out clean.
  8. Remove from pan and cold.
  9. Sift confectioners' sugar over top, if you like, before serving.
