Bachelor'S Stir-Fry

  1. Cook rice according to package directions; set aside.
  2. Dice chicken into 1-inch cubes; place in bowl with soy sauce and ginger.
  3. Mix; let sit for 5 minutes.
  4. In large skillet or wok, heat 2 tablespoons oil.
  5. Add chicken; stir until cooked on all sides.
  6. Remove chicken.
  7. Add 1 tablespoon oil and diced onion; fry until translucent (kind of clear).
  8. Add vegetables; stir-fry.
  9. Add chicken; stir-fry.
  10. Add stir-fry sauce; stir for 30 to 40 seconds. Serve over rice.
