Mexican Whopper Waffles Recipe
- 1 1/3 c. cornmeal baking mix
- 1 c. instant refried beans
- 5 ounce. soft tofu
- 3/4 c. nonfat lowfat milk
- 2 teaspoon oil
- Combine cornmeal and bean mixes.
- Beat tofu with lowfat milk and oil.
- Stir into dry ingredients till just blended.
- Heat waffle iron.
- Spread batter on to iron and cook till lightly browned.
- Keep hot as you cook remaining batter.
- Top with Mexican toppings such as salsa, shredded lettuce, cheese, etc.
