Silken Green Pumpkin Seed Polenta

  1. Heat oil in large, heavy saucepan over medium low heat.
  2. Cook onion, stirring often, for 8 minutes or until translucent.
  3. Stir in milk, garlic and hot pepper sauce and bring to boil.
  4. Reduce heat to low.
  5. Add cornmeal in THREE additions, stirring in each until fully incorporated.
  6. Cook, stirring, for 15 minutes or until polenta is thick and slight crust forms on bottom of saucepan.
  7. Stir in pumpkin seeds, Parmesan, parsley, salt, pepper and nutmeg.
  8. Makes 4 servings.
