Quick Chili With Rice
- nonstick spray coating
- 3/4 lb. ground turkey
- 1 Tbsp. chili powder
- 1 (29 oz.) can tomatoes, cut up
- 1 (16 oz.) can red kidney beans, drained
- 1 (12 oz.) can tomato juice
- 1/2 c. water
- 1 Tbsp. dried minced onion
- 1/2 tsp. salt
- 1/2 tsp. ground cumin
- 1/2 tsp. dried oregano, crushed
- 1/4 tsp. pepper
- 1/8 tsp. garlic powder
- 1 c. quick cooking rice
- sliced green onion (optional)
- Spray a 12-inch skillet with nonstick spray coating.
- Add turkey; cook until no longer pink.
- Drain off fat.
- Stir in chili powder; cook 1 minute.
- Stir in undrained tomatoes, beans, tomato juice, water, dried onion, salt, cumin, oregano, pepper, garlic powder and rice.
- Bring to boiling; reduce heat.
- Cover and simmer for 5 minutes, or until rice is tender.
- Garnish with sliced green onion, if desired.
