Potato Salad

  1. Put potatoes in large saucepan and cover with cold water.
  2. Bring to boil and cook for 10 minutes - until potatoes are just cooked.
  3. Drain and allow to cool.
  4. Heat small frying pan and cook bacon until slightly crispy.
  5. (Bacon can be omitted if desired)
  6. In a bowl combine mayonnaise, sour cream and crushed garlic.
  7. Once potatoes have cooled, add to bowl along with bacon, shallots, dill and capers.
  8. Mix to combine and season with salt and pepper.
  9. Serve immediately or refrigerate until needed.
  10. Can be garnished with a sliced boiled egg if desired.
