Spaghetti with Grilled Tuna
- 1 tbsp. olive oil
- 2 c. sliced medium-size zucchini
- 1 c. sliced red onion
- 1 1/4 tsp. salt
- 1/4 tsp. crushed red pepper
- 1 1/2 tsp. minced garlic
- 1 lb. spaghetti
- 1 tuna steak
- 1/4 tsp. Black pepper
- 1/4 tsp. freshly grated lemon peel
- 2 tbsp. fresh lemon juice
- 2 tbsp. chopped flat-leaf (Italian) parsley leaves
- Heat oil in a large skillet over medium-high heat.
- Add zucchini, onion, 1 teaspoon of the salt and the crushed pepper.
- Cook, stirring often, 3 minutes or just until zucchini is crisp-tender.
- Stir in garlic; cook 30 seconds.
- Cook spaghetti according to package directions.
- Before draining spaghetti, spoon off and reserve 2 tablespoons cooking water.
- Drain spaghetti and put into a large warm serving bowl.
- While the spaghetti cooks, heat the grill or broiler.
- Sprinkle fish with remaining 1/4 teaspoon salt and the black pepper.
- Grill or broil 3 inches from heat source 3 to 4 minutes per side for medium-rare.
- Cut in 1-inch cubes.
- Add fish and zucchini mixture to spaghetti along with the lemon peel and juice, the reserved water and parsley.
- Toss to mix and coat.
- Serve immediately.
