Easy Simmered Bite-Sized Koya Dofu
- 500 ml Dashi stock
- 20 cubes Bite-sized koya dofu
- 1 tbsp Sugar
- 2 tsp Mirin
- 1 1/2 tsp Soy sauce
- 1 Carrot
- 2 Shiitake mushrooms
- 1/2 Japanese leek
- Combine all of the liquid ingredients with the dashi broth and heat.
- When it reaches a boil, add the koya dofu, carrot, and shitake mushrooms.
- Simmer for 5 mintues, add the leek and continue to simmer for 10 minutes.
- It's ready when there's just a bit of liquid remaining.
