After The Holidays Salad Recipe
- 2 c. Diced cooked turkey
- 1 c. Pineapple chunks -- well
- Liquid removed
- 1 c. Diced celery
- 1/2 c. Sliced greed onions
- 1/4 c. Dry roasted peanuts
- 1 c. Seedless green peppers
- 2/3 c. Mayonnaise
- 2 Tbsp. Minced chutney
- 1 Tbsp. Lime juice
- 1/2 tsp Curry pwdr
- 1/4 tsp Salt
- Lettuce leaves -- optional
- In a mixing bowl, toss first six ingredients.
- In a small bowl, combine all other ingredients except lettuce.
- Pour over turkey and mix gently.
- Chill.
- Serve on a bed of lettuce, if you like.
- Yields: 4 servings.
- The fruit, nuts and seasonings give the salad a unique flavor.
