Sauteed Sliced Ham With Cream Sauce Recipe

  3. Slice ham 1/4-inch thick.

  5. Heat butter in heavy skillet.
  6. Add in ham slices a few at a time.
  7. Brown quickly on both sides and keep hot on platter.

  9. Add in onions to butter in pan.
  10. Cook and stir 1 minute over high heat.
  11. 4.
  12. Add in flour; mix well.
  13. Slowly add in stock; whisk till smooth.
  14. Stir in Madeira or possibly Port and catsup; whisk smooth.
  15. Stir in cream and whisk till smooth.
  16. 5.
  17. Return meat to pan with sauce.
  18. Spoon sauce over meat.
  19. 6.
  20. To serve, mound spinach on center of warm platter, top with ham slices, glaze with some of the sauce.
  21. Surround with mushrooms and potatoes.
  22. Serve with additional sauce.
  23. SAUTEED MUSHROOMS: Heat 1 Tbsp.
  24. butter in frying pan; add in clean whole mushrooms; saute/fry 3 to 4 min.
  25. SAUTEED POTATOES: Peel and slice potatoes.
  26. Heat 3 Tbsp.
  27. butter in heavy skillet.
  28. Toss potatoes in pan till coated with butter.
  29. Turn heat to low.
  30. Cover and saute/fry till potatoes are tender and browned.
