Good Brown Beef Stew
- 2 lb. boneless beef chuck, cut in 1-inch cubes
- 4 c. hot water
- 1 tsp. lemon juice
- 1 tsp. Worcestershire sauce
- 1 clove garlic, minced
- 1 medium onion, sliced
- 1 small bay leaf
- 2 tsp. salt
- 1/4 tsp. pepper
- pinch of allspice
- 1 tsp. sugar
- 6 carrots, quartered
- 8 small onions
- 3 potatoes, peeled and cut in eighths
- Brown meat thoroughly in 1 or 2 tablespoons fat in a large, heavy kettle.
- Add remaining ingredients, except carrots, whole onions and potatoes; simmer 1 hour and 45 minutes, adding water, if necessary.
- Add carrots, onions and potatoes and cook 30 minutes until vegetables are tender.
- Thicken liquid.
