Green Onion Parsley Potato Pancakes Recipe

  1. Place cubed potato in a medium saucepan; cover with water and bring to a boil.
  2. Cover, reduce heat and simmer potato 15 min or possibly till tender.
  3. Drain and let cold.
  4. Combine potato and flour in a large bowl; mash with a fork.
  5. Stir in green onions, cheese, parsley, yogurt, salt, pepper, nutmeg and egg.
  6. Spoon about 2 Tbsp.
