Applesauce Cake(Radford 1949 Cookbook, Mrs. Minor Wine Thomas)
- 1/2 c. butter
- 1/4 c. sugar
- 1/2 c. strained honey
- 1/2 c. cooking molasses
- 2 eggs
- 2 c. cake flour
- 1/4 tsp. salt
- 1/2 tsp. nutmeg
- 1 tsp. baking powder
- 1/2 tsp. allspice
- 1/4 tsp. cloves
- 1 tsp. cinnamon
- 1 c. nutmeats, broken
- 1 c. seedless raisins, finely cut
- 1 c. unsweetened applesauce
- Cream shortening.
- Add sugar.
- Blend well.
- Add beaten eggs, applesauce, honey and molasses.
- Sift dry ingredients together and mix 1/2 cup with raisins and nuts.
- Add rest of dry ingredients to the applesauce, then add the floured nuts and raisins.
- Turn into waxed paper lined pans and bake at 325u0b0 for about 1 hour, until done.
