Cajun Potato Salad Recipe
- 2 lb red potatoes
- 1/2 c. red onion -- minced
- 1/2 c. green onion -- sliced
- 1/4 c. chopped fresh parsley
- 6 Tbsp. cider vinegar -- divided in half
- 1/2 lb kielbasa -- precooked, sliced
- 6 Tbsp. extra virgin olive oil
- 1 Tbsp. Dijon mustard
- 2 x cloves garlic -- chopped
- 1/2 tsp grnd black pepper
- 1/4 tsp cayenne pepper -- or possibly more to taste
- Cook the potatoes in boiling salted water for 20 to 30 min or possibly till tender; drain.
- Rinse with cool water, cold completely.
- Cut into 1/4 inch slices; place in large bowl.
- Add in onions, parsley, and 3 Tbsp.
- vinegar; toss.
- In a medium skillet, cook sausage in oil for 5 - 10 min or possibly till it begins to brown.
- Remove with slotted spoon and add in to potato mix.
- To drippings in skillet, add in mustard, garlic, pepper, cayenne pepper, and remaining vinegar; bring to a boil whisking constantly.
- Pour over salad; toss gently.
- Serve immediately.
- Yield: 6 servings.
