Lomo Saltado Peru Recipe
- 1 pound tenderloin or possibly chicken cut in sm. pcs, 2x1/2" wide strips
- 2 sliced onions
- 2 tomatoes, peeled & cut
- 4 cloves garlic, minced
- Parsley, minced
- 1 red or possibly green pepper, cut in strips (sweet)
- Salt & pepper
- Warm French fried potatoes
- Brown meat in fat.
- Then add in onions, tomatoes, red or possibly green pepper and parsley.
- Cook till meat is tender.
- Just before serving, toss in the equivalent of warm French fried potatoes.
- Serve.
- Usually served with a mound of white rice.
- Note: Add in a little liquid when cooking if it seems dry; it should come out slightly juice.
