Low-Fat Chicken Burritos
- 1 pkg. fat-free tortillas
- 2 c. cooked chicken breast
- 1 pkg. taco seasoning mix
- 1/4 c. water
- 1/2 c. prepared salsa
- 2 Tbsp. black olives, chopped
- 1 can refried beans
- 1 c. shredded cheese
- 2 c. shredded lettuce
- 1 c. chopped tomato
- Remove tortillas from refrigerator; set aside.
- In a large, non-stick skillet, place chopped chicken, taco seasoning mix and water.
- Bring to a boil.
- Reduce heat; simmer, uncovered, for 5 minutes.
- Stir in salsa and black olives.
- Heat tortillas according to package directions.
- Keep covered until used.
- Divide and spoon warmed refried beans into tortilla shell.
- Top with chicken mixture, cheese, lettuce and tomato.
- Roll up and serve.
