Cowboy Quesadillas

  1. Combine VELVEETA and RO*TEL in 1-1/2-qt.
  2. microwaveable bowl.
  3. Microwave on HIGH 5 to 6 min.
  4. or until VELVEETA is completely melted and mixture is well blended, stirring every 3 min.
  5. Stir in chicken and onions.
  6. Heat large nonstick skillet on medium-high heat.
  7. Spoon about 1/2 cup chicken mixture onto half of 1 tortilla; fold in half.
  8. Add to skillet; cook 1 min.
  9. on each side or until golden brown on both sides.
  10. Remove from skillet.
  11. Repeat with remaining tortillas and filling.
  12. Cut into wedges.
