Beef Arlesienne
- 3 pound beef roast, pot roast boneless, cut into 1/2 inch pieces
- 2 tablespoons vegetable oil
- 6 each tomatoes peel and quarter
- 4 ounces mushrooms juiced
- 1/2 cup black olives pitted
- 1 clove garlic crushed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pinch basil sweet
- 1 each bay leaves
- Heat oil in Dutch Oven or electric frying pan.
- Add meat and hrown well on both sides.
- Pour off fat and add the rest of the ingredients to the pan.
- Cover tightly and simmer 2 1/2 to 3 hours.
