Spicy Lemon Chicken

  1. Place a large saucepot over high heat and add oil.
  2. Add onion and jalapeno pepper and
  3. saute until well browned.
  4. Add salt, pepper and carrots, cook for 3 to 4 minutes.
  5. Add chicken broth, Dijon mustard and lemon juice and simmer for 5 more minutes
  6. Add chicken into the sauce, let simmer on medium-low heat for 20 to 25 minutes.
  7. Add olives when ready to serve.
