Spicy Lemon Chicken
- 6 roasted chicken drumsticks
- 2 roasted chicken breast halves
- 2 c. sliced yellow onion
- 1 tsp. salt
- 1 jalapeno pepper, seeded and chopped
- 1 1/2 c. chicken broth
- 1 Tbsp. Dijon mustard
- 1/3 c. fresh lemon juice
- 1/2 tsp. black pepper
- 2 c. thinly sliced carrots
- 1/2 c. pimento stuffed olives
- 2 Tbsp. oil
- Place a large saucepot over high heat and add oil.
- Add onion and jalapeno pepper and
- saute until well browned.
- Add salt, pepper and carrots, cook for 3 to 4 minutes.
- Add chicken broth, Dijon mustard and lemon juice and simmer for 5 more minutes
- Add chicken into the sauce, let simmer on medium-low heat for 20 to 25 minutes.
- Add olives when ready to serve.
