Frittata with Mustard Greens and Fontina

  1. Preheat broiler.
  2. Heat oil in medium broilerproof skillet over medium-high heat.
  3. Add greens; stir until wilted and tender, about 2 minutes.
  4. Add garlic; stir 1 minute.
  5. Sprinkle generously with salt and pepper.
  6. Pour eggs over greens; stir to blend.
  7. Sprinkle with cheese.
  8. Cover skillet; cook until frittata is almost set but top is still runny, about 2 minutes.
  9. Place skillet under broiler.
  10. Broil until top is set and cheese bubbles, about 1 minute.
  11. Cut around frittata to loosen.
  12. Slide out onto plate.
