Chicken Croquettes

  1. Saute onion in butter for 2 to 3 minutes.
  2. Add flour, stirring until smooth.
  3. Cook for 1 minute and add water and cook, stirring constantly until thickened.
  4. Stir in bouillon granules, and next 5 ingredients.
  5. Cook over medium heat for 5 minutes.
  6. Remove from heat, cover and chill.
  7. Shape mixture into croquettes and roll in cracker crumbs.
  8. Pour 3 to 4 inches of vegetable oil in electric frying pan and heat to 350u0b0.
  9. Fry chicken until golden brown. Drain on paper towels.
  10. Serve with cream sauce, if desired.
  11. Makes 4 to 5 servings.
