Bavarian Potato Soup

  1. In a Dutch over or large saucepan, fry bacon.
  2. Drain all but 2 tbsp.
  3. drippings.
  4. Add vegetables, seasonings and enough water to cover.
  5. Simmer, covered, for 2 hours.
  6. Garnish with parsley, if desired.
