Vegetarian Pizza
- 2 Tbsp. wheat germ
- 2 (15 oz.) pkg. frozen pizza dough, thawed
- 1 c. nonfat Ricotta cheese
- 1/2 c. shredded part-skim Mozzarella cheese
- 1 tsp. minced garlic
- 1/4 tsp. each dried oregano and thyme
- corn meal
- 1 bunch broccoli florets
- 1/3 c. sliced black olives
- 1/2 c. roasted red pepper strips
- 3 plum tomatoes, sliced
- 1 yellow squash, cut in ribbons
- Heat oven to 450u0b0.
- Knead wheat germ into pizza dough. Spread dough to 1/2-inch thickness onto a nonstick baking pan coated with cooking spray, sprinkled with corn meal.
- In bowl, combine Ricotta cheese, Mozzarella cheese, garlic, oregano and thyme.
- Spread mixture onto crust.
- Top with vegetables.
- Coat with cooking spray.
- Bake 18 minutes.
- Top with 1/2 cup Mozzarella cheese; sprinkle edges with 1 tablespoon wheat germ.
- Bake 2 minutes more.
