Crabby Pattys Coleslaw Cups

  1. PREPARING THE CRABCAKES: Mix the crabcake ingredients together, except for the panko bread crumbs.
  2. Roll the mixture into large balls about 1-1/2 inch wide in diameter.
  3. Roll the balls in the panko bread crumbs.
  4. Heat up some oil in a fry pan at medium heat.
  5. Place crab balls into the pan and flatten with a spatula.
  6. Cook for 3-5 minutes or until golden brown.
  7. Flip and cook the other side.
  8. PREPARING THE COLESLAW: Mix the coleslaw ingredients together.
  9. Thats pretty much it.
  10. PREPARING THE PROVOLONE CHEESE CUPS: * This was done following Pastor Ryans tutorial which you can find on his blog site with great photos.
  11. Preheat a round fry pan on the stove at medium heat for about 5-minutes.
  12. Place a slice of cheese onto the pan and watch it sizzle.
  13. Dont walk away from it.
  14. Bubbles will start to form on it.
  15. Large bubbles.
  16. Sort of like making pancakes.
  17. The edges will start to brown and the bubbles will become smaller.
  18. This usually takes about 5-minutes.
  19. Flip the cheese with a flat spatula and crisp up the other side.
  20. When ready, place the still hot cheese into a ramekin and push down the center of it with a small round cup, bowl or ladle.
  21. Careful not to tear or crack the cheese.
  22. It forms and hardens quick so do this step fast!
  23. Then pull the cheese cup out of the ramekin and set on a paper towel to cool and harden completely.
  24. The cheese creates a lot of oil as it heats up.
  25. Discard the oil after every 2 slices or so to avoid over oiliness.
  26. ASSEMBLING EVERYTHING TOGETHER: Make sure you assemble everything together last minute to avoid getting the cheese crisps soggy.
  27. Place a small pile of coleslaw into the cheese cups.
  28. Place a crab cake over the coleslaw.
  29. Garnish with chopped tomatoes and chives.
