My Sig Chili
- 2 Tbsp. olive oil
- 2 lb. beef chuck, cubed
- 1 onion, chopped fine
- 1 green pepper, chopped
- 3 cloves garlic, crushed
- 1 (28 oz.) can crushed tomatoes
- 1/2 Tbsp. chili powder
- 1/2 Tbsp. basil
- 1/2 Tbsp. ground cumin
- 1/2 tsp. oregano
- 1/4 tsp. crushed red pepper
- 1 (16 oz.) can red kidney beans, drained
- shredded cheese
- Fritos
- Brown meat quickly in olive oil.
- Transfer meat to bowl. Saute onion, green pepper and garlic in same pan.
- Stir in beef, tomatoes and spices.
- Heat to boiling.
- Stir occasionally.
- Reduce heat, cover, add 1/4 cup water and cook 2 hours, stirring occasionally.
- Uncover and cook 45 minutes longer.
- Stir in beans and heat about 5 minutes.
- Put in bowls; sprinkle with cheese and Fritos.
