Crab And Shrimp Hot Dish
- 2 c. cooked white rice
- 1/2 c. chopped celery
- 1 (4 1/2 oz.) can water chestnuts
- 1 c. tomato juice
- 1/8 tsp. pepper
- 1 (7 1/2 oz.) can crab meat
- 1 c. shredded sharp Cheddar cheese
- 1/2 c. chopped green pepper
- 1/2 c. chopped onion
- 1 c. real mayonnaise
- 1/4 tsp. salt
- 1 lb. cooked shrimp
- 1/4 c. sliced blanched almonds
- In a buttered 2-quart casserole dish, combine the rice, green pepper, celery, onion and water chestnuts.
- In a bowl, combine mayonnaise and tomato juice.
- Stir in salt and pepper.
- Pour half of the mixture over rice.
- Arrange shrimp and crab around edge, leaving a hole in center.
- Pour rest of liquid over everything. Put almonds and cheese in center.
- Sprinkle with paprika.
- Bake, covered, in a preheated 350u0b0 oven for 30 minutes.
