Furikake Salmon

  1. Start by washing the salmon fillet and thoroughly pat dry with paper towels.
  2. Preheat the oven to 350 degrees F.
  3. Lightly grease a baking sheet with olive oil (I like to brush it on or use a paper towel to rub it on).
  4. As an option, you can add a little sesame oil to the baking sheet for a smokey Asian flavor.
  5. Place your fillet on it skin-side up and generously drizzle olive oil, salt and pepper all over.
  6. Flip the fish over, skin-side down and repeat.
  7. Set aside.
  8. To make the sauce, mix the mayonnaise with the wasabi in a small dish.
  9. For those sensitive to spicy foods, the wasabi becomes very subtle once baked.
  10. Generously spread the mayonnaise mixture evenly over the entire flesh side and sprinkle the furikake seasoning on top of the mayonnaise mixture.
  11. Bake 20 minutes uncovered.
  12. Cut and serve with lemon wedges, fresh green vegetables like radish sprouts or a salad medley and/or rice.
