Black-Eyed Peas

  1. heat coconut oil in pot over medium heat.
  2. add onions, celery, and salt.
  3. cover and sweat for five or so minutes, until vegetables begin to turn translucent.
  4. add garlic and continue cooking for two more minutes.
  5. mix in remaining ingredients and bring to a boil.
  6. cover and simmer over low heat for 45 minutes, or until beans are tender.
  7. serve plain or over rice.
