Ma-Po Tofu
- 10 ounces silken tofu, cut into small pieces
- 2 tablespoons oil
- 1 teaspoon minced fresh ginger
- 1 teaspoon minced garlic
- 14 lb ground sirloin
- 1 tablespoon spicy bean paste
- 12 cup strong beef stock
- 12 tablespoon tamari
- 2 teaspoons sugar
- 1 tablespoon potato starch
- 1 small sichuan pepper
- 12 teaspoon sesame oil
- 2 stalks chopped spring onions
- Heat oil and saute ginger and garlic until bouquet is released.
- Add ground sirloin and cook just until no longer pink.
- Stir in bean paste and mix well.
- Add tofu and stir until blended.
- Add stock, tamari and sugar; mix well.
- Thicken with potato starch mixed with a little bit of water.
- Add pepper, spring onion and sesame oil.
- Stir and serve.
