Chicken Fried Rice
- 1 cup long-grain white rice, uncooked
- 2 tsp. oil, divided
- 1 lb. boneless skinless chicken breasts, cut into 1-inch pieces
- 2 green onions, cut into 1-inch pieces
- 1 tsp. minced fresh gingerroot
- 2 eggs, beaten
- 1/2 cup frozen peas, thawed
- 1/4 cup KRAFT Asian Toasted Sesame Dressing
- 2 Tbsp. lite soy sauce
- Cook rice as directed on package.
- Meanwhile, heat 1 tsp.
- oil in large nonstick skillet on medium-high heat.
- Add chicken; cook and stir 5 to 6 min.
- or until done.
- Remove chicken from skillet.
- Add remaining oil, onions and ginger; cook on medium heat 1 min.
- Add eggs, stirring to scramble.
- Add rice and peas; cook and stir 2 min.
- Add chicken and remaining ingredients; cook and stir 3 min.
- or until heated through.
