White Chili from Betty Goes Vegan

  1. In a huge soup pot with a lid, cook the onion, garlic, and oil over medium heat until the onions are tender.
  2. Add the rest of the ingredients.
  3. Cover and heat to a boil.
  4. Remove cover and simmer for 20 minutes.
  5. Serve with vegan Parmesan and bread.
