New Potato and Cucumber Salad with Fresh Herbs

  1. Cook potatoes in large pot of boiling salted water until tender, about 18 minutes.
  2. Drain potatoes; cool.
  3. Peel potatoes.
  4. Cut into 3/4-inch cubes and place in large bowl.
  5. Add cucumbers and onion.
  6. Whisk all remaining ingredients in small bowl.
  7. Add to potatoes.
  8. Season with salt and pepper.
  9. (Can be made 8 hours ahead; chill.)
