Easy Chilled Tomato and Daikon Radish Salad
- 1 Tomato
- 5 cm Daikon radish
- 5 Shiso leaves or basil leaves
- 1 tbsp Soy sauce
- 1/2 clove Garlic (grated)
- 1 Sesame or olive oil
- 1 generous amount Sesame seeds
- Slice the tomato thinly, and chill in the refrigerator.
- Cut the daikon radish into short thick matchsticks, and sprinkle with salt.
- Shred the shiso leaves and put into a bowl of water.
- (If you're using basil, rip up the leaves with your hands.)
- Squeeze out the daikon radish and shiso or basil leaves well using paper towels to remove any excess moisture, and put into a plastic bag.
- Add enough soy sauce to coat the vegetables plus the garlic, and leave to rest in the refrigerator for at least 30 minutes.
- Put the daikon radish and shiso leaves on top of the tomatoes from Step 3, pour the marinade over all.
- Drizzle with sesame or olive oil and top with sesame seeds.
