Waikiki Meatballs
- 1 12 lbs ground beef
- 23 cup cracker crumb
- 13 cup minced onion
- 1 egg
- 1 12 teaspoons salt
- 12 teaspoon ginger
- 14 cup milk
- 2 tablespoons cornstarch
- 12 cup brown sugar, packed
- 1 (13 ounce) can pineapple bits, drained, saving the juice
- 13 cup vinegar
- 1 tablespoon soy sauce
- 12 cup chopped green pepper (optional)
- Mixz meat, crumbs, onion, egg, salt, ginger and milk.
- Shape mixture into small balls.
- Melt 1 tablespoons shortening in a large skillet.
- Brown and cook meatballs.
- Pour fat from skillet.
- Mix cornstarch and sugar.
- Stir in reserved syrup from drained pineapple bits, vinegar and soy sauce until smooth.
- Cook over medium heat, stirring constantly until the mixture thickens and boils.
- Boil and stir for 1 minute.
- Add meatballs, pineapple bits and green pepper, if using.
- heat thoroughly.
