Apple Streusel Muffins w/ Cream Cheese Drizzle
- 2 cup all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cup apple pie filling
- 1/4 tsp ground cinnamon
- 3 small pinches ground nutmeg
- 6 tbsp butter (softened)
- 2/3 cup light brown sugar
- 2 tbsp all purpose flour
- 1/2 tsp ground cinnamon
- 2 tbsp cold butter
- 3 oz cream cheese (softened)
- 1 1/2 tbsp butter (softened)
- 2/3 cup powdered sugar
- 1/4 tsp vanilla extract
- 2 tbsp milk (or more depending on thickness u want)
- Preheat oven to 375F
- Prepare jumbo muffin cups with baking spray.
- Muffins:
- Open can of pie filling and cut apple pieces into smalleer bite sized pieces.
- In a medium bowl sift all dry muffin ingredients.
- In another bowl wisk together all wet ingredients.
- Stir apples into wet mix.
- Including all the yummy gooey liquids.
- Add wet to dry and stir until just incorporated.
- Do not overmix.
- Fill prepared jumbo muffin tins about 2/3 full of batter.
- Set aside.
- Streusel topping:
- Combine all streusel ingredients and cut intil well combined.
- U should have a crumbly mix.
- Sprinkle topping over muffin batter.. about 1.5 tbl.
- Per muffin.
- Bake about 30 minutes or until toothpick comes out clean.
- Cool a few minutes then transfer to wire rack for cooling.

- Cream cheese drizzle:
- Place all drizzle ingredients in a medium bowl.
- Beat all together until well blended and creamy.
- Use as is or add more milk 1tbl.
- At a time until u reach desired thickness.
- Drizzle over muffins just before serving.
- Or use thicker and frost the muffins like cupcakes.
- Serve warm or cool.
- Enjoy!
