Low-Fat King Ranch Chicken Casserole
- 2 c. diced chicken, white chicken (no skin)
- 7 oz. baked Tostitos
- 3/4 c. chopped onion
- 1/2 c. chopped green pepper
- 1 Tbsp. chili powder
- 1 c. low-fat milk
- 1 can Healthy Request cream of chicken soup
- 1 can Healthy Request cream of mushroom soup
- 1 can Ro-Tel
- 1/2 lb. diced fresh mushrooms (optional)
- 1/4 lb. low-fat Mozzarella cheese, shredded
- 1/4 lb. low-fat Cheddar cheese, shredded
- Spray a 9 x 11-inch casserole dish with Pam.
- Crush Tostitos and spread in bottom of dish.
- Add diced chicken.
- Blend remaining ingredients except cheese.
- Pour over chicken.
- Top with cheese. Bake in 350u0b0 oven until bubbly for about 40 minutes.
- Serves 12. There are 3.5 grams of fat per serving, 150 calories per serving.
