Cream Of Celery Soup

  1. Chop bacon; put in pan with butter.
  2. Cook gently a few minutes.
  3. Add celery, potato and onion; cook together 4 to 5 minutes, stirring constantly, to prevent browning.
  4. Sprinkle in flour; blend smoothly.
  5. Add stock; mix well.
  6. Bring to boil and reduce heat.
  7. Add bay leaf, parsley and thyme; simmer 20 to 30 minutes, until vegetables are tender.
  8. Put through fine food mill or into electric blender or food processor; blend until smooth. Reheat gently.
