Ham Steak Cabbage Soup
- 12 ounces vegetable juice cocktail
- 1 medium onions diced
- 4 each celery stalks cut up
- 1 envelope onion soup mix
- 2 cans tomatoes chopped
- 1 teaspoon parsley leaves minced
- 1 pound cabbage
- 2 cans beef stock
- 3/4 pound ham steak in bits
- Put V-8 and celery into a blender, high speed until minced.
- Combine with all other ingredients in a soup kettle.
- Bring to a boil.
- At once, turn to a gentle simmer and let it simmer covered for 2 hours or until cabbage is tender.
