Fluffy Whole Wheat Focaccia

  1. Knead together all the ingredients except those marked with the and the shortening.
  2. Once it gathers together, knead the shortening into the dough.
  3. Make into a neat ball and let rise until it doubles in size.
  4. Divide into four pieces and roll into balls.
  5. Let rest for 15 minutes.
  6. Roll the dough out to 10cm diameter disks and allow to rise (2nd rising).
  7. Poke holes in the tops with your fingers, coat with olive oil, and sprinkle with rock salt.
  8. Bake in an oven preheated to 220C for 13 minutes.
  9. The first time, try making a plain version.
  10. With cheese and tomato!
