Fluffy Whole Wheat Focaccia
- 170 grams Bread (strong) flour
- 30 grams Whole wheat flour
- 10 grams Raw cane sugar
- 3 grams Salt
- 2 grams Instant dry yeast
- 120 grams Water
- 10 grams Shortening
- 1 Olive oil
- 1 Rock salt or Krazy Salt
- 1 Topping of your choice
- Knead together all the ingredients except those marked with the and the shortening.
- Once it gathers together, knead the shortening into the dough.
- Make into a neat ball and let rise until it doubles in size.
- Divide into four pieces and roll into balls.
- Let rest for 15 minutes.
- Roll the dough out to 10cm diameter disks and allow to rise (2nd rising).
- Poke holes in the tops with your fingers, coat with olive oil, and sprinkle with rock salt.
- Bake in an oven preheated to 220C for 13 minutes.
- The first time, try making a plain version.
- With cheese and tomato!
