Vegetable Misto Recipe
- 1 lg. red pepper, minced
- 1 lg. green pepper, minced
- 1 lg. onion, minced
- 2 lg. potatoes, peeled & diced
- 2 tbsp. extra virgin olive oil
- 2 med. zucchini, minced
- 1 pound fresh mushrooms, minced
- 1/4 teaspoon red pepper
- 1/2 teaspoon Italian seasoning
- 1/2 c. fresh Italian parsley, minced
- 3 cloves garlic, crushed
- 1/4 c. Parmesan cheese, freshly grated
- In a large saute/fry pan, saute/fry the peppers, onion and potatoes in the oil for about 5 min; stir often.
- Add in zucchini, warm pepper, mushrooms, seasonings, parsley and garlic; stirring often for 10 min.
- Toss with Parmesan cheese and serve warm.
- Serves 6.
