Vegetable Misto Recipe

  1. In a large saute/fry pan, saute/fry the peppers, onion and potatoes in the oil for about 5 min; stir often.
  2. Add in zucchini, warm pepper, mushrooms, seasonings, parsley and garlic; stirring often for 10 min.
  3. Toss with Parmesan cheese and serve warm.
  4. Serves 6.
